Olive Oil

The history of olive cultivation and oil production in Greece dates back to ancient times, around 3500 BC, highlighting the extensive development of Greek civilization. Currently, olive oil remains a crucial aspect of Greek cuisine, renowned for its exceptional quality and numerous health benefits.

Messinia

Messinia is a seaside town of geographical importance for the production of olive oil. It is famous for its historical role and cultural wealth, while offering excellent gastronomy and natural beauty.

Kapsala

This name comes from a very old recipe. In earlier years, children, after a long day of harvesting olives in the fields, ended up in the olive mills, which operated at night. There, holding a large slice of Zea’s leavened bread, baked on the coals of the olive mill, they would go to the damizanes with fresh agur oil and dip the slice of bread into it. They added salt and oregano. It was — and still is — the most delicious bread. 

Standardisation

Kapsala applies strict standards at all stages of production and bottling. Criteria include:

The Myth of Athena

In ancient Greece, Poseidon asked Cecrops to name the new city Poseidonia, offering a saltwater spring.
Then Athena offered an olive tree as her gift, symbolizing beauty, knowledge, and culture.
The gods and city’s inhabitants chose Athena’s gift. The city was named Athens in her honor.

Neuroaxial Oscillation

This refers to how many commands per second the brain’s control center sends — to the jaw, to memory recall, etc.
Consuming Greek Extra Virgin Olive Oil supports this process, enabling about 800,000 commands per second to control the 175,000 muscle fibers of the lower jaw, essential for speech transmission.

24th Polyunsaturated

An enzyme found in fatty acid bundles, produced in the liver.
Its role:

  • Produces myelin (which insulates axons in the CNS)
  • Increases the speed of neuroaxial oscillation
    It is found only in Extra Virgin Olive Oil produced only in Greece.

The symbol depicted in the letter Kappa has its roots in the Mycenaean civilization (17th Century BC).

It symbolizes olive oil. This symbolism is included in the ideograms of Linear B’, a syllabic alphabet which was the first writing of the Greek language.
